According to this wiki page, today is Sandwich Day! It doesn’t say “National” sandwich day, but I’ll take this opportunity to talk about pizza subs.
I miss subs, and I make about a million varieties too! Hot ham and cheese with onions, sweet banana peppers and Italian dressing, hot ham with cheese and brown mustard, you name it! I have always loved a sub. I think it’s because when I was growing up, K-Mart used to sell the most awesome subs around and my brother and I would get a few dollars and walk down just to get their subs. I have no idea why they quit selling them and put Little Ceasar’s in there, but I certainly know that I loved those subs! All of the lunch meat and onions and shredded lettuce just combined to make what I consider a most perfect sammich! I miss them….
Once going gluten free, I didn’t think I would ever have a sub again, I thought those days were just over for me, but then I went to Kroger one day and saw Udi’s Hotdog buns and I was like Homer Simpson all staring and drooling. Why? Because they are BIG!
Big enough for giant Johnsonville Brats and big enough to make, you guessed it, subs! I’ve made mock French Bread pizzas out of these and subs, they are big enough to get the job done and they toast up so heavenly ….mmmmmmm. Hang on, I have to finish this sammich before I can continue. I’ll be right back.

Let me tell you how easy it is to make, too! Get you some gluten free pizza sauce, shredded cheese, pepperoni and whatever else you desire (you can see above that I desired pineapples!) and put them on a cookie sheet and pop them babies into the oven at 350 degrees for about 15 minutes or so and there you have it! Gluten Free Pizza Subs with Udi’s Hotdog Buns! So easy that I’m going to share another recipe with you:
Take your hotdog buns and pile them up with ham, cheese, onions and sweet banana peppers. Pop them into the oven at 350 degrees for about 15 minutes or so (really depends on whether you like them browned a little and since all ovens are different, just go with your gut here) and then add some lettuce, may and Italian dressing to those puppies. HEAVEN!!!!
