Oatmeal Scotchies are my favorite cookie – hands down! I am actually surprised that it took me this long to make them my way but I give you Gluten Free Oatmeal Scotchies today kids! Applause! Applause!
Really, my soon to be 12 year old daughter made them, because I can’t stand on my feet in the kitchen – I have major surgery in 16 days – and they are delish! I swear I ate 4 of them and about made myself sick! That’s how good they are!

You can find gluten free oatmeal at the Kroger in Englewood – Bob’s Red Mill brand. Not terribly too expensive, but worth it if you love these little guys as much as I do. Give ’em a try! I like Bob’s oatmeal – I am going to make an apple crisp with it as soon as I can get in the kitchen. I love apple crisp.
These cookies are chewy and just awesome. I don’t like crunchy cookies really, I mean, I was putting my Oreos on a fork way back in the day – before it became cool. I like chewy cookies, yum, and these are chewy butterscotch-y perfection, I tell you!

The instructions do not include the flour or the baking soda…when do you add those?
