I have to tell you…these are some UGLY donuts. Why? Well, I don’t have a donut maker, or a donut cutter so I just used my biscuit cutter and fried them in some Crisco. Yep. UGLY. But they taste fantastic!
Well, the one on the left and the donut hole ones are ok but that big one? Chalk that up to impatience! I couldn’t wait to get them done so I threw the remaining dough in a fritter kinda thang. Did I tell you that I haven’t had a donut in over a year? A year!
If you are like me and haven’t had donuts on your gluten free diet, you know that nothing can replace them. NOTHING. I was raised on Dunkin’ and can’t go to the local Speedway without walking past the Krispy Kremes. It was killing me.
So what’s a girl to do? Make her own gluten free version! Behold! Gluten free donuts with chocolate ganache!
Then I ate all 3 of those up there. I’m sick to my stomach now, but it was worth it – although a nap may be next on today’s agenda…
When you make this dough, it comes together like cookies actually, but don’t let that stop you from throwing it down, sprinkling some flour on it and rolling it out. Knead it, knead it good. That’s the trick to a smooth dough that will actually rise when frying – see above if you have doubts – the one on the left. Ignore my fritter.
I used a biscuit cutter and they fluffed up nice, and all of that kneading makes them lighter than you think. I know gf bread and biscuits and such are kind of dense, but these came out surprisingly light! I mean, I did eat all 3 of them…because they were delicious! I’m so happy now that I can have donuts again – because donuts make me go nuts!
