The best gluten free strawberry cupcakes on the planet
For the cupcakes:
  • 2 c granulated sugar
  • 1 (3 oz) package of Strawberry Jell-O
  • 2 sticks of butter (melted)
  • 4 eggs, separated
  • 2¾ c gluten free flour
  • 2½ tsp baking powder
  • 1 c whole milk
  • 1 tbs vanilla extract
For the frosting:
  • 1 stick of butter (room temperature)
  • 2½ tbs granulated sugar
  • 1 (8 oz) package of cream cheese (room temperature)
  • ½ tsp vanilla extract
  • 3½ c powdered sugar
  • 6 tbs strawberry simple syrup
For the cupcakes:
  1. In a stand mixer, combine flour, baking powder, cake flour and dry Jell-O mix
  2. Add the melted butter and mix
  3. Add the milk and vanilla and mix
  4. Add the 4 egg yolks and mix until combined
  5. Whip the egg whites until stiff peaks are formed and fold gently into the
  6. cupcake batter
  7. Bake at 350° for 30 to 35 minutes until a tooth pick comes out clean when
  8. inserted into the center
  9. Let cupcakes cool completely before frosting
For the frosting:
  1. In a stand mixer, cream butter and sugar until smooth with paddle
  2. attachment
  3. Add room temperature cream cheese and beat until smooth again
  4. Add powdered sugar at the rate of about ½ c at a time and mix until fluffy
  5. Add vanilla and strawberry syrup and mix until fluffy and beautiful
  6. Frost those cupcakes!
